- Ceramic coating
- A mineral-based non-stick layer marketed as a PTFE alternative. It looks great and is metal-utensil tolerant to a point, but the non-stick effect usually fades faster than good PTFE, so set expectations accordingly.
- Non-stick
- A coated cooking surface that lets food release easily and needs less oil, ideal for dosas, omelettes and low-fat cooking. Its lifespan depends on the coating quality and on using wooden or silicone utensils rather than metal.
- PFOA-free
- Means the non-stick coating was made without perfluorooctanoic acid, a processing chemical now phased out over health concerns. Almost all reputable Indian cookware is PFOA-free today, so treat it as a baseline, not a premium feature.
- PTFE / Teflon
- Polytetrafluoroethylene, the slippery synthetic coating that makes a pan non-stick. It is safe for everyday cooking but starts to break down above roughly 260°C, so avoid empty preheating on high flame.
- Triply / 5-ply
- Cookware built from bonded layers, typically stainless steel outside and inside with an aluminium or copper core for even heat. Triply is durable, non-reactive and induction-friendly, making it a long-term buy despite the higher price.
